James “Jim” W. Adcox

On Thursday, April 22, 1954 in Shakopee, MN, Thomas D and Patricia (Cates) Adcox, proudly announced the birth of James William Adcox. He was the youngest of four children. Jim’s childhood years were spent in Shakopee. As a young child, Jim loved to take things apart and put it back together. He loved to bang on the drums, loved wrestling for the high school wrestling team and drove his mother crazy with his good-natured rebellion. He graduated from Shakopee Senior High School in 1973.

After high school, Jim worked at the Radisson Hotel in the kitchen, as he attended and graduated from culinary school. In 1976, Jim welcomed his first of three daughters on his 22nd birthday. In 1989, Jim left the restaurant business for Morrissey Incorporated, a metal stamping company. Starting from the bottom up, he quickly worked his way to upper management and work there for the next 22 years until he retired in 2011.

Throughout life, Jim enjoyed working with wood, building bird houses, puzzles and much more. Jim used his uncanny mathematical skills to develop projects from the blue prints to the finished product. Over the last few years, Jim was building his “dream workshop” and found a lot of joy when building with his hands.

The pride and joy of Jim’s life was his children and grandchildren. As a family, they treasured the times camping at Sherwood Forest Community in Aitkin County, where they loved to fish and enjoy each other’s company. Jim’s life was going to be complete once again, with marrying Linn Grimmer on July 28, 2012. This past year had been one of his happiest.

A generous, kind and soft-hearted big teddy bear of a man, Jim was gracious, loving, but yet quite a prankster, who had a real life cougar growl. A resident of Shakopee, James Adcox, age 58, passed away peacefully in the presence of his family the late evening hours of Thursday, May 10, 2012 at Abbott Northwestern Hospital in Minneapolis, MN.

Forever loved, James will be deeply missed by his fiancée, Linn Grimmer of Shakopee; children, Rachel (Tony) Reichstadt of St. Louis Park, Chantel (Cory) Ellingson of New Prague, Alycia Adcox of Minneapolis, Wendy (Kevin) Olson of Prior Lake, Robert (Keri) Wood of Huntingtown, MA, Chad (Melissa) Grimmer of Greenfield, James Grimmer of Bloomington, Melissa Grimmer of Minneapolis; 14 grandchildren; brother, Tom (Jan) Adcox of Excelsior; sister, Kris (Ken) Otto of Belle Plaine; brother-in-law, Jerry Kotsmith of Minnetonka and many other loving relatives & friends.

James is preceded in death by his parents and sister, Mary Beth Kotsmith.

Pallbearers for James will be Tony Reichstadt, Cory Ellingson, Troy Otto, Andrew Ellingson, Robert Wood and James Grimmer .

The Celebration of Life Service will be on Monday, May 14 at 11 a.m., with visitation starting at 9:30 am all at Ballard-Sunder Funeral Home, 833 South Marschall Road, Shakopee, MN. Reverend Randall Romsdahl will officiate. James will be laid to rest by his mother and sister at the Shakopee Catholic Cemetery at a private family interment.
